Into obscurity?

Dear Editor,

I fear Hudson’s Château du Lac building will follow the same sad route into obscurity as Le Vieux Kitzbuhel, that former amazingly popular restaurant in Île-Perrot, did a few years ago. When an establishment like that changes ownership it effectively becomes a new business. The new one now has to meet current standards for fire safety, ventilation and more importantly, how that all applies in the kitchen. In the case of Le Vieux Kitzbuhel it would have required an expenditure of close to $200,000 to do that. The renovations required to ensure adequate means of egress would have completely destroyed the charm of the place that helped to attract clients (of course the food helped. I still so miss their Wienerschnitzel, Rot Kraut and Knödel). I suspect that in the case of ‘The Chat’ that might have influenced Darryl Grant to pass on the deal.
